What Are Ice Cream Cakes Made Of?

You may have indulged in an ice cream cake within a past celebration you attended. Ice cream cakes are a type of cake which consists of layered ice cream, sponge cake and even cookie crumble. Like the ingredients used in a normal cake, the ice cream cake ingredients use a sponge cake base which is baked and cut to the shape of the cake and then frozen. Likewise, the ice cream is shaped like the sponge to be layered while frozen. A frosting is typically added to balance the two different textures. The entire cake is then frozen before serving, for the ice cream to thaw and soften so it can be sliced easily but not to the extent where the ice cream has melted.

Ice cream cake is a popular party dessert, during birthday and wedding celebrations it is commonly used as the birthday and wedding cake. Mainly in America and Australia, Sydney ice cream cakes and gelato cakes as a dessert and in cakes are widely adored.

Ice Cream Cakes

Ice cream cakes consist of between 10 percent and 16 percent butterfat. Ice cream is very high in fat content due to the amount of butter and cream used, however due to the high-fat content and large volume of air that is churned when making the ice cream, while it is freezing this generates a great level of creaminess. This high amounts of fat and air is what distinguishes ice cream cakes from gelato cakes. Additionally, when ice cream is labelled as frozen dessert, this entails that the ice cream has been made with vegetable oil and it technically not ice cream. This type of ice cream ‘frozen dessert’ is not ideal for ice cream cakes.

Gelato has a strong and vibrant flavour and is served slightly warmer than frozen comparable to soft serve ice cream. Italian gelato is denser than ice cream since it is less airy due to the slow churning when making gelato. Italy is renowned for its culinary gifts shared all around the world, pasta and pizza, to name a couple… but nothing refreshes us on a hot summer day like delicious gelato. This sweet treat we all indulge in today has quite an interesting history and fact which you may not have known about this creamy, cooling delicacy.

 

1. The Italian Word Gelato Means Ice Cream

The word congelato means frozen in the Italian language. Gelato is an Italian word which means ice cream. Like ice cream, gelato contains sugar, milk and flavouring like nuts and fruit, but gelato has significantly less cream and fat than ice cream with typically no eggs.

 

 

2. Early Italian Gelato Was like Sorbet

Even though we can confirm the exact roots of gelato, ancient communities in Egypt and China added salt and fruit to snow, making a primeval cold dessert. Ancient Roman emperors supposedly consumed a similar dessert, and this dessert is one of the multitudes of culinary creations, but Italians used water instead of milk, this meant that early gelato resembled sorbet.

 

3. The First Gelato Café in Paris is Still Open Today

In 1686, Procopio Cuto, a fisherman and chef from Palermo, made the first gelato machine. He started a café called Café Procope in Paris, which sold coffee and gelato to Parisians and literary thinkers including Voltaire and Rousseau. Astonishingly, you can still visit Café Procope and the restaurant now serves tuna steak, snails and beef tartare.

 

How Does Gelato Have Less Fat & More Flavour Than Ice Cream?

It is not uncommon for people to love gelato as it unbelievably has considerably less fat than ice cream yet tastes much more flavourful. Gelato is thicker and smoother than ice cream because less air is churned into it when it is being made. Gelato’s Warmer Temperature Gives It Stronger Flavour.

Gelato is typically store at warmer temperature than ice cream. Ice cream is usually served frozen at approximately -20 Celsius, while gelato is -13 Celsius. The warmer temperature allows gelato to keep its soft, smooth and savoury for your tastebuds so your tongue will less numbed by the cold, this way you can appreciate the flavour to the fullest.

 

The Gelato World Cup Is A Yearly Competition

Every year international teams contest at the Gelato World Cup known as the Coppa del Mondo della Gelateria in Italian. Teams from countries including Japan, Morocco, the United States, Spain and Australia travel to Italy to compete. These teams contest to make their best gelato, sundae and even ice sculptures. In the 2018 Gelato World Cup, France came first, with Spain second and Australia claiming the third spot!

Gelato and ice cream are surprisingly different, here are a couple points.

At first sight, ice cream and gelato appear to be very similar. However, they both use different ingredients and churning processes, as a result, both frozen desserts are quite unique.

Ice Cream

Ice cream is a dairy dessert made from cream, milk, sugar and egg yolks. These ingredients are combined into a custard base to be frozen and churned at high speeds. This rapid churning adds a lot of air into the freezing cream which results in an airer texture. While ice cream uses a lot of cream and preservatives/artificial flavours, ice cream is not surprisingly much higher in fat content than gelato.

  • Mostly made of cream
  • Includes egg yolks
  • 10 -18 percent fat
  • Around 50 per cent air
  • Served Frozen, -20 Celsius

 

Gelato

The word Gelato, is Italian for ice cream. Gelato offers less calories, sugar and fat per serving than ice cream. Unlike ice cream which uses a lot of fatty cream, gelato uses whole milk and is churned at a much slower speed. This adds less air into the freezing mix leaving a much denser and elastic texture. Gelato is made and served at -13 Celsius which is a little warmer than ice cream, creating a silkier and smoother texture. Because it has a lower percentage of fat than ice cream, the main flavor ingredient really shines through.

The Scoop

There are main differences in temperature and fat which affects how we taste. When we are consuming food with fat content such as ice cream, the fat actually creates a layer over our tongue between the food and our taste buds. This layer combined with the extremely cold temperature ice cream is served in makes it difficult for us to taste flavors. The human palate cannot taste foods that are very cold such as the 0 Celsius temperature ice cream is stored in. While gelato is stored at -9 degrees and has less fat than ice cream, gelato flavours are much more intense and savoury.
